Each April, undergrads host Hotel Ezra Cornell, a weekend-long extravaganza in which students manage every aspect of the Statler Hotel's operations, from check-in to the dining room, maid service, and special receptions and events attended by alumni and industry leaders. Throughout the academic year, upper-level students manage the hotel's restaurants.

The hotel school offers one of the most popular courses on campus, Introduction to Wines, as well as Principles of Investment Management, Housing and Feeding the Homeless, and Tourism.

The library in Statler Hall houses an extensive collection of cookbooks, as well as more than 100 computers and 200 software packages, allowing students to master the programs in use at hotels worldwide.

The student body represents 42 countries, and over the course of their education, they log a mandatory 800 hours of practical experience. Some put in their time at the Statler Hotel, while others find internships from Las Vegas to New York City, Germany to Denmark.
